Ingredients

For the chicken:

  • 500 g boneless chicken, cut into thin strips
  • 1 egg
  • 3 tbsp cornflour
  • 2 tbsp all-purpose flour (maida)
  • 1 tsp ginger-garlic paste
  • 1 tsp black pepper
  • 1 tbsp soy sauce
  • Salt to taste
  • Oil for frying

For the sauce:

  • 2 tbsp oil
  • 8–10 garlic cloves, finely chopped
  • 1-inch ginger, julienned
  • 6–8 dried red chilies
  • 1 onion, sliced
  • 1 capsicum, sliced
  • 2 tbsp tomato ketchup
  • 1 tbsp red chili sauce
  • 1 tbsp soy sauce
  • 1 tsp vinegar
  • 1 tsp sugar (optional)
  • ¼ cup water
  • 1 tsp cornflour mixed with 2 tbsp water
  • 2 tbsp roasted cashew nuts
  • Spring onion for garnish
  • Sesame seeds (optional)

Method

  1. Mix the chicken with the egg, flours, ginger-garlic paste, soy sauce, pepper, and salt. Marinate for 20–30 minutes.
  2. Deep-fry the chicken until golden and crisp. For extra crispiness, fry it twice.
  3. Heat oil in a wok. Sauté garlic, ginger, and dried red chilies for about 30 seconds.
  4. Add onion and capsicum and stir-fry on high heat for 2–3 minutes.
  5. Add ketchup, chili sauce, soy sauce, vinegar, sugar, and water. Mix well.
  6. Stir in the cornflour slurry and cook until the sauce thickens.
  7. Add the fried chicken and roasted cashews. Toss until every piece is coated.
  8. Garnish with spring onions and sesame seeds. Serve hot.
